Description

Embark on a culinary and architectural journey through the heart of Bogotá, where Colombia's diverse geography and rich history come to life. This tour blends the exploration of iconic colonial architecture with an immersive introduction to the country’s varied landscapes and cultural tapestry, showcased through its vibrant gastronomy.

Start at a beautifully preserved colonial house, where you’ll see traditional clay roofs and an internal courtyard, setting the stage for an exploration of Colombia's diversity. A relief map of Colombia will guide you through the geographical diversity that breeds the country's culinary richness, starting with tapacones from the Caribbean coast, which exemplify the flavors of the region.

As you stroll through the city, your guide will delve into Bogotá's history—from its colonial past to its role as the cultural epicenter amidst internal migration and social change. Discover a traditional bakery run by Doña Blanca, a third-generation bakery known for her Tolimense tamales and local baked goods, where locals from all backgrounds gather for a taste of authentic, homemade flavors.

Continue your taste journey with a discussion of iconic Colombian dishes such as empanadas, which, like the musical rhythm of cumbia, represent a blend of African, Spanish, and Indigenous influences. Explore other regional specialties like aborrajados from Valle and arepa de huevo from the Caribbean coast, each telling a story of cultural integration and culinary invention.

As you walk, take in the architectural contributions of Salmona with views of the Torres del Parque and the bustling movements along Kra 7. Upon reaching the square, delve into the social dynamics of urban-rural interactions and explore Barrio de la Perseverancia, one of the city's first working-class neighborhoods.

At the next culinary stop, enjoy the comfort foods of the Cundiboyacense region prepared by Gladys, with generous portions. Engage with the cooks and learn about the hearty stews that warm the soul of this community.

Your gastronomic adventure concludes with a tasting of a controversial yet classic Colombian treat—chocolate with cheese inside, discussing the Andean-Amazonian origins of chocolate, its significance in Colombia's development, and its role in the post-conflict era as a tool for change.

This tour offers not only a taste of Colombia’s regional dishes but also a profound understanding of its cultural and historical depths, inviting you to see, taste, and learn about a country rich in tradition and transformation.

How this tour creates an impact

This gastronomic experience is special because you’ll visit and support local chefs and food initiatives. One of the highlights of this experience is stepping by Luz Dary’s restaurant at La Perseverancia Market. She is a leader that has transformed the face of this market and others around the city. In 2016, she also won the prize for the best “Ajiaco” in Colombia! During the tour, you’ll also visit a local coca initiative where indigenous people come together to promote the nutritional and spiritual use of this powerful plant and clear up stereotypes about it that we’re caused through the detrimental use in drug production.
